8 Avocado Pasta

Serves: 3-4

Time: 15 minutes

 

Ingredients:

1 box of pasta (I used gluten free)

2 avocados, sliced

1 red onion, diced

handful of cherry tomatoes

parmesan

fresh garlic

salt

 

Directions:

Start by boiling some water in a pot on high. While waiting for the water to boil, start cutting the avocados, red onions and cherry tomatoes into small pieces. Set aside. Once the water is boiling, add the noodles and cook until firm. Once the noodles are done, put the noodles in a strainer and then put them back into the pot. Add a generous amount of olive oil onto the noodles to avoid sticking. Add a scoopful of fresh garlic. Add onions, avocados and tomatoes to the noodles. Stir until the avocados soften and thicken into the pasta. Sprinkle as much parmesan as desired. Add salt.
