2 Egg & Hash Brown Scramble
Serves: 1
Time: 10 minutes
Ingredients:
1 hash brown patty or 1 cup of shredded potatoes
1 or 2 eggs
feta cheese
1/4 cup red onions or green onions, chopped
1/4 cup of black beans, drained
Directions:
Start by frying the preferred hash brown or shredded potatoes on medium heat. While the potatoes are cooking, start sautéing the onions in another pan. Occasionally check on the potatoes to see if turning brown. Remove potatoes from heat until desired crispiness is achieved. After onions are slightly cooked, 5 minutes, place on a separate plate. Start cooking the eggs over easy. Heat up the black beans in the microwave for about 1 minute or until warm. Place the potatoes on a plate first, eggs next and then black beans, onions and feta cheese.
