Breakfast Bowls – Barley
Barley Bowl
Prep time -30 minutes
Servings – 1
Ingredients:
1 c. cooked barley
¼ c. apple, chopped
¼ c. orange, chopped
1 tbsp. hazelnuts, chopped
1 tsp. orange juice
½ tsp. orange zest
1 tbsp. organic maple syrup
½ tsp. cinnamon
1 dash of cloves
1 dash of salt
Directions
- Cook the barley according to package directions. Cook extra and freeze for a quick breakfast.
- While barley is cooking, prepare fruit and hazelnuts. Chop apple, orange, hazelnuts, and zest orange. Cook chopped hazelnuts in maple syrup and dash of cinnamon on stove top until caramelized.
- Add cooked barley to a bowl and top with fruit and hazelnuts.
- Add cinnamon, cloves, orange zest, and orange juice. Top with some maple syrup and orange zest. Mix well and enjoy.
