Breakfast Bowls – Barley

Barley Bowl

Ingredients:

1 c. cooked barley

¼ c. apple, chopped

¼ c. orange, chopped

1 tbsp. hazelnuts, chopped

1 tsp. orange juice

½ tsp. orange zest

1 tbsp. organic maple syrup

½ tsp. cinnamon

1 dash of cloves

1 dash of salt

 

Directions

  1. Cook the barley according to package directions. Cook extra and freeze for a quick breakfast.
  2. While barley is cooking, prepare fruit and hazelnuts. Chop apple, orange, hazelnuts, and zest orange. Cook chopped hazelnuts in maple syrup and dash of cinnamon on stove top until caramelized.
  3. Add cooked barley to a bowl and top with fruit and hazelnuts.
  4. Add cinnamon, cloves, orange zest, and orange juice. Top with some maple syrup and orange zest. Mix well and enjoy.
