Dinner Salad Recipes
Peach Salad
This salad can be made two different ways.
Prep time – 20 minutes
Serves – 4
Ingredients
Version #1:
10 cups romaine lettuce
4 ripe peaches, slices
1 c. cooked quinoa or other grain
1/2 c. raw snow peas
1 Tbsp. sunflower seeds
2 Tbsp. pomegranate seeds
Version #2:
10 c. romaine lettuce
6 ripe peaches
3/4 c. walnuts or pecans
1 ounce grated mild cheese
Dressing
Ingredients
2 ripe peaches, sliced
2 Tbsp. fig or other all-fruit preserves of choice
1 Tbsp. raspberry balsamic vinegar
2 tsp. extra virgin olive oil
Salt and pepper to taste
Directions
Assemble all of the salad ingredient and wash and slice then for the salad. Mix them together and then mix the salad dressing together.
