Tabbouleh

Bulgur wheat is the base for this salad.

Prep Time: 30 minutes

Servings: 6

 

Ingredients

1 1/2 c. cooked bulgur wheat

1 1/2 c. diced tomato

1 1/2 c. diced cucumber

1/3 c. chopped fresh parsley

1/8 c. chopped sweet onion

1 tsp. chopped fresh mint

3-4 Tbsp. fresh lemon juice

1 Tbsp. extra virgin olive oil

2 Tbsp. water

1/4 tsp. salt

Lemon slices to serve

 

Directions

Cook the bulgur according to directions and set aside.  Prepare the vegetables and mix them with the grain.  Mix the lemon, oil, water, and salt together and mix it with the other ingredients.

Berry Salad

salad with raspberries, grapes, nuts, and cheese

 

 

 

 

 

 

 

Prep time – 20 minutes

Servings – 4

 

Ingredients

5 cups lettuce, roughly chopped

½ cup walnuts, roughly chopped

1 cup blueberries

1 cup raspberries

½ cup grapes

1 cup cucumbers, chopped

3 ounces blueberry cobbler cheddar cheese, cubed

 

Lemon Poppyseed Dressing

Juice of 1 lemon

1 Tbsp. avocado oil

1 tablespoon poppy seeds

2 tablespoons raw honey

¼ teaspoon salt

¼ teaspoon pepper

⅛ cup onion, diced

 

Directions

  1. Put all salad ingredients in a bowl
  2. Put all dressing ingredients into a food processor and blend until smooth.
  3. Serve salad with dressing on the side or drizzled on top.
