Chimichurri
Chimichurri is a sauce that goes on fish, bean burgers, or other proteins.
The platter above was a choice on a sandwich bar.

Ingredients
- 1 cup parsley
- 1 cup cilantro
- 1/2 cup mint leaves
- 1 serrano pepper
- 2 tablespoons onion
- ¼ cup red wine vinegar
- ½ cup olive oil
- ¼ teaspoon salt
- 4-6 garlic cloves, roasted
Preparation
- Roast garlic cloves in a small pan over medium heat until fragrant, about five minutes.
- Deseed and roughly chop the pepper.
- Roughly chop the herbs.
- Add all ingredients to a food processor and pulse until smooth.
