Chimichurri

Chimichurri is a sauce that goes on fish, bean burgers, or other proteins.

The platter above was a choice on a sandwich bar.

Prep time:  15 minutes

Serves:  13

Ingredients

  • 1 cup parsley
  • 1 cup cilantro
  • 1/2 cup mint leaves
  • 1 serrano pepper
  • 2 tablespoons onion
  • ¼ cup red wine vinegar
  • ½ cup olive oil
  • ¼ teaspoon salt
  • 4-6 garlic cloves, roasted

Preparation

  1. Roast garlic cloves in a small pan over medium heat until fragrant, about five minutes.
  2. Deseed and roughly chop the pepper.
  3. Roughly chop the herbs.
  4. Add all ingredients to a food processor and pulse until smooth.
