Chapter Summary:
This chapter examines a 10-day global, local, and Indigenous food systems experiential learning course for graduate and undergraduate students. The course employed several intangible cultural heritage (ICH) pedagogies to introduce students to the main concepts in foodways. The course included active learning and heritage-sourced activities that facilitated student theoretical learning. The chapter discusses lessons learned in the course and the importance of teaching food systems through ICH pedagogies.
